Pea and Mushroom Pasta a la Linguine

For this pasta epicness:

1/2 pack Linguine

SAUCE 
1 can crushed tomatoes
1 small can peas
1/4 cup of - olive oil, parmesan cheese, shitake mushrooms
1/4 tsp of - salt, pepper, Italian seasoning, thyme, crushed red pepper, cilantro, garlic, onion powder

That's all you need! Enjoy the tastiness :D Short, sweet, yummy, and healthy!

Protein-Filled Greek Yogurt Caesar Salad

*Greek Yogurt Caesar Salad mix from Jewel -- use all of it
*2 hard boiled eggs
*1 tsp Pepper!
*Optional: 1 large, chopped Hass Avocado

It was like 12:30pm and I felt like enhancing my noms a little bit to give me extra protein!

Enhanced Knorr Rice Sides

Made from a Knorr Rice Side White Cheddar Queso flavor, here's what I did with stuff I had in my pantry:

*1 pack Knorr Rice Side White Cheddar Queso with olive oil, water, and milk as specified on the back of the pack

I also added:

*1 can Black Beans
*1 can Corn
*5 tbsp chopped White Onion (red works too)
*3 tbsp chopped Red Peppers
*1 chopped Clove of Garlic
*3 tbsp Hot Sauce of choice
*1 tbsp Taco Seaoning
*1 tbsp Cilantro
*1 tsp Freeze Fried Chives
*1 tsp Salt
*1 tsp Pepper
*1/4 cup Sharp Cheddar Cheese (optional)

*Cook according to directions on the Knorr package and enjoy :D Takes about 15 to 20 minutes to cook and about 10 to prep!

Cous Cous Adventures

I am very blessed to have cooking ability and I'm sure I'm not alone in being low on food and/or money. What would you do if you were in that situation? Go out to eat? Go get Mickey D's? Nah! Why not just throw together what I find in my apartment and call it a day! You know, kind of like Chopped and making a "food salad" combined! This way, I can still feel like I'm eating gourmet, but on a budget! #poorpostcollegegradproblems

*Cous Cous: I have made WAY too much Cous Cous for my own good, but the 5 minute cous cous in the box isn't a bad idea. I got the tomato and lentil flavor and added peas, red onions, garlic, sun dried tomatoes, onion powder, a dash of cumin, chives, red bean noodles (from Whole Foods that I keep at my apartment at my disposal), a package of veggies from an already-used Ramen Noodle pack, and Tabasco Sauce. This can give me up to 4-6 servings, depending on what I use it for!

Homemade Black Bean Soup Recipe

Homemade black bean soup. Here's the recipe:
*1 can black beans (or a can of black bean soup)
*1 tsp Better Than Bullion Chicken Broth
*1/2 can of water
*1 tsp cilantro
*5 tbsp chopped red onion
*3 tbsp fall flavor salsa (from Trader Joe's is where I got mine and any salsa works )
*1 pinch of salt
*1 pinch of pepper
*1 minced clove of garlic
*1 tbsp hot sauce of your choice
*1 tsp Taco seasoning
Cook on medium heat until bubbles start to form. Once that happens, turn off your burner and let cool for 3-5 minutes. Enjoy your nice hot soupie :D Can be topped with shredded sharp cheddar cheese too!

Tuna Salad on Crackers Recipe

Dat tuna on crackers life! I'm so low on money this is what I found in the crib today:

1 can Starkist tuna in water
5 tbsp light mayo
3 tbsp yellow mustard
5 tbsp dill relish
1 tsp Italian seasoning
1 tsp onion powder
1 tsp Taco seasoning
5 tbsp minced onions

I dipped pepper jack favor Nut Thins in my tuna. It was a good light lunch indeed :)

Mom's Quick and Easy Recipes

I found these old things on one of my flash drives. My mom made these dishes all the time. They're not the most healthy, but they're super tasty. Here are the recipes:




Toffee Cookies
1 cup butter
1 cup brown sugar
1 egg yolk
2 c(ups) sifted flour
1 tsp vanilla
4 hershey bars (king sized)
1 bag chopped nuts

Cream butter and add sugar. Add beaten egg yolks and mix thoroughly. Add flour, beating well. Add the vanilla and then spread the batter onto a greased cookie sheet. Heat the oven to 350 degrees and once heated, put the cookie sheet in the oven for 25 minutes. Once ready, put the chocolate on top of the hot cookie and spread it around the cookie to melt it. Then sprinkle the nuts on top and cut cookies into whatever size you want



Green Bean Casserole
2 9oz packages of frozen cut green beans, thawed and drained (OR 2cans (16oz each) cut green beans, drained
3/4 cup milk
1 can (10 3/4 oz) condensed cream of mushroom soup (Campbell’s brand)
1/8 teaspoon (Durkee brand) Ground Black Pepper
1 can (2.8 oz) (Durkee brand) French Fried Onions

In a medium bowl, combine beans, milk, soup, pepper, and 1/2 can french fried onions, pour into a 1 1/2 quart baking dish. Bake, uncovered at 350 degrees Fahrenheit for 30min or until heated through. Then top with remaining onions, bake uncovered for 5 minutes (or until onions are golden brown). Makes 6 servings



Rice Pilaf 
1 stick butter
2 bag extra fine egg noodles (Manishevitz brand)
1 cup minute rice (Uncle Ben’s brand -- maybe -- a red box)  optional
2 cans of 98% fat free chicken broth (cottage inn or Jewel/generic brand)
1-2 chicken flavored bullions (bullion cubes)
1/4 cup water

On the side, boil the water and the bullion cubes. In a large pan, put the butter in it to melt it. Cook the egg noodles until browned in the pan. Add the cup of (dry) minute rice over the noodles. Carefully dump in the chicken broth. Simmer everything (on 10watts or low setting) in the covered pan for 20-25min. Then, dump the bullion water on top and recover and continue to cook (the same way) for 20-25 more minutes
